Oil type : Extra Virgin Olive Oil

Certified organic olive oils use organically grown olives and meet organic production standards for their region. Extra virgin olive oil is the highest quality olive oil. By definition it must have some fruity flavor, zero defects, free fatty acid level below 0.8%, and be derived by cold extraction below 27°C ~ 80°F.

Cultivars : Frantoio, Leccino, Pendolino

There are hundreds of olive tree varieties, each with its own distinct taste and aromas.

Intensity : Medium

Intensity correlates to the amount of bitterness and/or pungency experienced when consuming an extra virgin olive oil. An olive oil with little bitterness that creates little to no sensation in the back of the throat is considered mild. A very bitter olive oil that causes a slight burning or spicy sensation in the mouth and throat is robust. We rate intensity between 5 values: Mild, Medium, Medium Robust, Robust and Extreme.

Harvest Date : October 2025

As a fresh food product, properly stored olive oil should be consumed within 2 years from the time of harvest for best flavor. Harvest runs from October through January in Northern Hemisphere regions, and from April through July in Southern Hemisphere regions.

A Bold Tuscan-Style Field Blend from California’s Innovative Olive Truck

This Tuscan field blend from The Olive Truck is a striking example of how California’s olive oil industry continues to lead in innovation, experimentation, and terroir-driven production. Milled in Petaluma County using The Olive Truck’s groundbreaking mobile mill, this extra virgin olive oil captures both the spirit of Tuscany and the distinct microclimates of Northern California.

Composed of Frantoio, Leccino, and Pendolino, this field blend is milled from olives harvested together and processed simultaneously. Unlike post-milled blends, field blends allow enzymatic interactions between cultivars during malaxation, producing tasting notes and complexities that cannot be attributed to any single olive variety. The result is an expressive, layered oil that reflects both the land and the year of harvest.

Vibrant, Appley, and Herbaceous on the Nose

The aroma opens with a burst of Granny Smith apple, a signature note that appears immediately and sets a bright, green tone. Supporting aromatics include artichoke, culinary herbs, and fresh-cut greens, giving the bouquet a lively and highly aromatic profile.

The nose is both crisp and vegetal, offering a preview of the bitterness and energy to come on the palate.

Bold Bitterness, Dynamic Green Flavours, and a Spicy Finish

On the palate, this oil reveals itself as a robust, high-phenolic Tuscan-style EVOO.
It is boldly bitter—with the distinct bitterness of Frantoio shining through—yet beautifully balanced by fresh green fruitiness.

A Celebration of Innovation and Terroir

This Tuscan field blend underscores why California remains at the forefront of modern olive oil production.
The mobile mill allows olives to be crushed at peak freshness, preserving phenolic content and expressing Petaluma’s unique cool-climate terroir with remarkable clarity.

Final Thoughts

This is a powerful, well-rounded, and confidently green Tuscan-style EVOO, crafted with innovation and precision. Lovers of bold, bitter, early-harvest oils will find this bottle complex, compelling, and deeply satisfying.

For those seeking a high-phenolic California olive oil that truly expresses terroir while honoring traditional Tuscan cultivars, this field blend from The Olive Truck delivers richness, structure, and a vibrant sense of place in every pour.
