Dragon Fruit Smoothie Bowl
So much healthiness and beauty in one little (or big!) bowl! Start with this recipe, but dive in to your favorite fruits and feel great about the start to your day! Keep things seasonal and local for the most intensely fresh and delicious bowl!
Ingredients
- 1 Half dragon fruit chopped
- 1 cup Mango frozen
- ½ Banana frozen
- 1 cup Ice
- 2 tbsp Eureka Lemon Olive Oil
- ½ cup Coconut water
Toppings:
- ¼ cup Flaked coconut
- 1 tbsp Hemp seeds
- ¼ cups Thinly sliced mango
- 2 tbsp Eureka Lemon Olive Oil
- 2 tbsp Greek yogurt
Instructions
- Blend bowl ingredients together until very smooth and creamy, no lumps remaining. Divide into 2 bowls and set aside.
- Top each bowl with your chosen toppings in any lovely pattern you desire. In a small bowl, stir together yogurt and olive, then drizzle over top the bowls.
Notes
Smoothie bowls are totally a do-as-you-please bowl… top it with anything healthy that floats your boat! Just make sure your fruit going into the smoothie bowl is frozen to keep your blend thick. If you're in a rush, add a tad more liquid and blend again – smoothie on the go!
