Apple Cinnamon Overnight Oatmeal and Chia

Apple Cinnamon Overnight Oatmeal and Chia

Breakfast made while sleeping – who can argue with that?! This version has a warm, spiced fall feel to it, but as long as you follow to ratio of 1:2 oats to liquid ratio, you can go to town with your own versions! We love the creamy oats and how the spiced syrupy apples warm you to the core 🙂

Ingredients
  

  • 2 Cups rolled oats
  • 3 Cups milk (almond, 2%)
  • 1 Cup greek yogurt
  • 2 tbsp chia seeds
  • 3 tbsp apples diced
  • 2 tbsp white sugar
  • 3 tbsp ground Cinnamon
  • 3 tbsp Blood Orange Olive Oil
  • ¼ Cup Cinnamon Pear Dark Balsamic
  • ¼ Cup fresh cranberries
  • ½ Cup walnuts chopped

Instructions
 

  • In a medium non-stick pan over medium heat, saute diced apple and sugar in Blood Orange Fused Olive Oil for 4-5 minutes and then add Cinnamon Pear Dark Balsamic. Add in whole cranberries and saute until fruit is coated and vinegar has reduced and is syrupy. Set aside to cool.
  • In 4 mason jars, pour in ½ cup of oats, then pour in ¾ cups milk and ¼ cup yogurt in each jar, followed by ½ tbsp chia seeds. Cover with lid and rings and shake to combine. Reserve ½ cup of cooled apple cranberry mixture, and divide remainder of fruit saute to each jar, stirring to combine. Cover with lids and refrigerate jars overnight, at least 12 hours. In the morning, add reserved fruit mixture and top with chopped walnuts and serve.
