Olivastra Review

Such a rare and delicious Tuscan varietal is a delight to review, these old-growth trees tell a story through the fruit, of the hillside they have called home for over 200 years. Green, vibrant, and bold this olive oil has notes of fresh cut grass, floral herbs and bright bitter arugula. A warming peppery finish that lingers, rounds out this full and harmonious flavour profile.

Oil type : Extra Virgin Olive Oil

Certified organic olive oils use organically grown olives and meet organic production standards for their region. Extra virgin olive oil is the highest quality olive oil. By definition it must have some fruity flavor, zero defects, free fatty acid level below 0.8%, and be derived by cold extraction below 27°C ~ 80°F.

There are hundreds of olive tree varieties, each with its own distinct taste and aromas.

Intensity : Medium Robust

Intensity correlates to the amount of bitterness and/or pungency experienced when consuming an extra virgin olive oil. An olive oil with little bitterness that creates little to no sensation in the back of the throat is considered mild. A very bitter olive oil that causes a slight burning or spicy sensation in the mouth and throat is robust. We rate intensity between 5 values: Mild, Medium, Medium Robust, Robust and Extreme.

Polyphenols : 305ppm

Polyphenols are antioxidant micronutrients found in plant-based foods. The phenolic concentration in olive oil depends on variables like the variety, ripeness at harvest, extraction methods, etc.

Acidity : 0.25%

Acidity is one of the quality parameters set by the IOC for extra virgin olive oil. By definition extra virgin olive oil must have a free fatty acid level below 0.8%. Acidity CANNOT be detected by sensory analysis. This value is always determined by a laboratory.

Harvest Date : Fall 2021

As a fresh food product, properly stored olive oil should be consumed within 2 years from the time of harvest for best flavor. Harvest runs from October through January in Northern Hemisphere regions, and from April through July in Southern Hemisphere regions.

Review

Tenuta Fanti Olivastra is created from a collection of trees grown on a sunny Tuscan hillside. This vibrant and delicious extra virgin olive oil is a monocultivar Olivastra and fragrant with grassy green, and herbaceous aromas. The Tenuta Fanti Olivastra is packed with a rich bitterness and lingering pungency. This profile will augment almost any dish. Its robust and intense flavour is perfect for using over soups, paired with aged cheeses and even homemade pizza dough.

Italy has the greatest biodiversity of olives compared to any other country. They boast more than 500 unique varietals of olives. Many of these are found on just one hillside or are unique to one community. A cluster of trees that have grown in that location for hundreds of years. Tenuta Fanti estate has been part of the Fanti family for over 300 years and extends through the rolling hills of Tuscany. Their focus is viticulture, although on the land is naturally, olives too, more than 8,500 trees. With a focus on quality, their wine and olive oil production reflect their dedication and share their deep history through their products.

Their olive oil is a testament to all that they create, the taste and quality in each bottle is so delicious. This olivastra is no exception and I hope you enjoy it as much as I have.

Tasting Notes
Fresh green and vibrant, this olive oil is packed with character. Present aromas of fresh cut grass, creamy artichoke, floral herbs and bright bitter arugula. A warming black peppery finish that lingers, and rounds out this full and harmonious flavour profile.

Packaging Notes
Bottled in dark glass, with full wrap labels, preventing as little light penetration as possible. This will conserve freshness and prevent the degradation of the oil. Antitamper pour spouts also allow easy drizzling.

Olivastra Pairs Well With

Grilled Vegetables

Tossing this Olivastra with bell peppers, eggplant, and zucchini along with some salt, and lemon juice makes for the most delicious grilled veg. Simple is key, knowing that the bright bitterness of the oil will infuse itself into the vegetables, and enhance the sweet smokey flavours, creating the perfect bite

Aged Cheese

A wedge of parmesan, aged cheddar, or asiago, paired with a drizzle of honey and a bowl of this Olivastra for dipping makes for a tasty and well-balanced appetizer. The vibrant note of the oil blend perfectly with the depth of an aged cheese.

Salmon

Mixing this Olivastra with parsley, dill and mint to make a light herb sauce and spreading it over salmon to grill, creates a delectable meal. Serve with a side of grilled asparagus, or zucchini finished with another glug of oil and dinner is satisfying, so healthy and delicious!
