Oil type : Extra Virgin Olive Oil

Certified organic olive oils use organically grown olives and meet organic production standards for their region. Extra virgin olive oil is the highest quality olive oil. By definition it must have some fruity flavor, zero defects, free fatty acid level below 0.8%, and be derived by cold extraction below 27°C ~ 80°F.

There are hundreds of olive tree varieties, each with its own distinct taste and aromas.

Intensity : Robust

Intensity correlates to the amount of bitterness and/or pungency experienced when consuming an extra virgin olive oil. An olive oil with little bitterness that creates little to no sensation in the back of the throat is considered mild. A very bitter olive oil that causes a slight burning or spicy sensation in the mouth and throat is robust. We rate intensity between 5 values: Mild, Medium, Medium Robust, Robust and Extreme.

Harvest Date : Fall 2022

As a fresh food product, properly stored olive oil should be consumed within 2 years from the time of harvest for best flavor. Harvest runs from October through January in Northern Hemisphere regions, and from April through July in Southern Hemisphere regions.

Review

Novello – meaning fresh oil in Italian always an early harvest oil that is the first produced of the season. It’s typically created in small quantities, where quality is the most important focus and factor in production. Novello oils are special; whenever I get a chance to enjoy one, it’s thrilling to sip the first flavours of the harvest.*

This Novello from Vignoli Food Anthology is made exclusively with Ogliarola Barese olives from Central Puglia. The olives were chosen for their quality, harvested in September the olives are milled less than 8 hours from picking in a continuous cold extraction. The results are a well-balanced, high-antioxidant oil, with a complex herbaceous mouth feel. It’s so good with these Blackened Salmon tacos paired to massage into the kale and drizzled over the salmon too.

This oil is unfiltered and is best consumed within 6 months of harvest. Packaged to appreciate the oil’s beautiful colour, please store the bottle in the box provided, as excessive light will cause olive oil to spoil.

*I couldn’t wait to taste this oil when it arrived, and tried it before taking the photo, so a few glugs are missing from the bottle!

Packed in a clear bottle inside a box, to appreciate the oil's vibrant colour, but guard it against the effects of light exposure. To best preserve, store the bottle inside the box.
