Curry Chicken Brochettes

Curry Chicken Brochettes

Meat on a stick? Yes Please! These skewers marinate and soak in some lovely flavours. Start marinating early in the day and come home to some intensely flavoured chicken!

Ingredients
  

  • 4 Boneless skinless chicken breasts cubed
  • 1 cup Greek yogurt
  • ¼ cup Blood Orange Olive Oil divided
  • 2 tsp Cayenne Olive Oil
  • ½ Package Curry Rub or 2 tsp ground Mild Curry

Instructions
 

  • Combine Curry Rub with 2 tbsp Blood Orange and Cayenne Olive Oil and add chicken breast to marinade. Let sit for 30 minutes, before skewering on metal or wooden skewers that have been soak in water for 15 minutes to avoid burning.Step 2 -Preheat grill to medium heat and grill brochettes for 4 minutes per side. Serve alongside Tabbouleh salad or Fennel Citrus Salad.
