Reserva Review

Domenica Fiore’sOlio Reserva, is a delightful robust and peppery extra virgin olive oil. A classic IGP Tuscan Blend created from of Frantoio, Leccino and Moraiolo olive varieties. These are three of my favourite olive varietals that are blended to make one of my favourite extra virgin olive oils. Frantoio, naturally bitter, herbaceous and robust on its own, is balanced by a more fruity Leccino, a classic Tuscan varietal and Moraiolo.

Oil type : Organic Extra Virgin Olive Oil

Certified organic olive oils use organically grown olives and meet organic production standards for their region. Extra virgin olive oil is the highest quality olive oil. By definition it must have some fruity flavor, zero defects, free fatty acid level below 0.8%, and be derived by cold extraction below 27°C ~ 80°F.

There are hundreds of olive tree varieties, each with its own distinct taste and aromas.

Intensity : Robust

Intensity correlates to the amount of bitterness and/or pungency experienced when consuming an extra virgin olive oil. An olive oil with little bitterness that creates little to no sensation in the back of the throat is considered mild. A very bitter olive oil that causes a slight burning or spicy sensation in the mouth and throat is robust. We rate intensity between 5 values: Mild, Medium, Medium Robust, Robust and Extreme.

Polyphenols : 420ppm

Polyphenols are antioxidant micronutrients found in plant-based foods. The phenolic concentration in olive oil depends on variables like the variety, ripeness at harvest, extraction methods, etc.

Acidity : 0.11%

Acidity is one of the quality parameters set by the IOC for extra virgin olive oil. By definition extra virgin olive oil must have a free fatty acid level below 0.8%. Acidity CANNOT be detected by sensory analysis. This value is always determined by a laboratory.

Harvest Date : Fall 2020

As a fresh food product, properly stored olive oil should be consumed within 2 years from the time of harvest for best flavor. Harvest runs from October through January in Northern Hemisphere regions, and from April through July in Southern Hemisphere regions.

This complex Domenica Fiore Reserva is well-balanced and very robust. Looking for a bright, vibrant and pungent olive oil? This will soon be a favourite. From the first aroma to the lingering pungent, capsicum-like finish, it is a true example of an IGP Tuscan Blend extra virgin olive oil.

The love and care for their oil extend from the first blossom the Domenica Fiore Reserva is no exception. Domenica Fiore as a company takes great care in transporting their extra virgin olive oil. Transportation is one of the steps often forgotten as olive oil moves from farm to table. It’s one of the reasons why it is so hard to get quality olive oil in North America. If a truck is driving through the desert or prairies on a hot summer day and carrying olive oil, the heat will cause it to go bad in a matter of hours. The same happens if a beautiful olive oil is put on the top deck of the ship while it crosses the Atlantic ocean, it is no longer beautiful when it gets to the grocery store.

Dominica Fiore not only uses 80/10 stainless steel bottles. The olive oil is also packed under nitrogen gas and always transported in heat-controlled environments. They do their very best to make sure when you open the bottle, the oil taste exactly the way it would on the olive grove just after pressing, no matter when you crack that seal. Dedication to the craft from branch to bottle.

This oil has so many uses that it’s hard to start naming them all. A few favourites are Caramelized Onion and Tomato Tart, Chimichurri, and Chicken Parmesan

Tasting Notes
This extra virgin olive oil is robust! Peppery in the best way, it is perfect for roasted meats and vegetables on the grill. I love it for deep rich tomato sauces and also for pairing with hard cheese and drizzling on sourdough bread for a snack.

Packed in 80/10 Stainless bottles flushed with nitrogen before bottling. This oil is as preserved as it possibly can be, during transportation through all the channels to land on your kitchen counter.

Reserva Pairs Well With

Grilled Meats

Robust and packed with flavour, this oil is the best addition to steak, pork, ribs and chicken. Use in a marinade or simply as a drizzle as soon as they come off the grill. The heat will naturally release the aromas from the oil and each bite will be infused with notes of artichoke and tomato.

Cheese

Planning a cheese platter? This oil is best paired with aged cheeses, like Asiago, Parmesan or aged Gouda. Serve with dried figs, nuts and savoury crackers to tie all the flavours together.

Pasta

Looking for a finishing oil for that spicy tomato-based pasta sauce? This Reserva is calling you! Use to make the soffrito, and then add another glug on top before serving, pulling the flavours together. The spicy almost capsicum finish is tempered with the natural acidity of the tomatoes, and matched with rich noodles is all things creamy, aromatic and delicious.
